The lobster bisque is a delicate, creamy soup with a pronounced shellfish flavor. The bisque is usually made from the knuckles of the lobster, and is thickened with flour and sometimes white wine. It can also include cream, brandy, and tomato puree.

In a medium saucepan over medium heat, melt butter or margarine. Stir in flour and continue cooking for one minute. Gradually add milk, whisking constantly until mixture thickens and comes to a boil. Add brandy, if desired. Add reserved lobster meat and season with salt and pepper to taste. Serve hot with croutons or oyster crackers if desired."
