Lobster Prices Are Set to Skyrocket
The Maine Lobstermen's Association has announced that the price of lobster is set to skyrocket, and it's all because of the tariffs placed on imported seafood by the Trump administration.
Maine lobster is a favorite food of Presidents Trump and Xi Jinping, and they have been known to enjoy it during their bilateral meetings. The problem is that the United States is placing tariffs on Chinese-made lobster, while China isn't placing any tariffs on American lobster. As a result, the price of American lobster is now double the price of Chinese-made lobster.
Lobstermen in Maine are worried that they won't be able to compete with the cheaper Chinese-made lobster, and they could lose their jobs as a result. The price of lobster has already increased by 25% in the past year, and it's expected to go up even more in the weeks ahead.
Lobster is the New Gourmet Dish
Lobster is often associated with fine-dining establishments and considered a delicacy, especially in the United States where it is sometimes used as a symbol of luxury. Lobster dishes are often expensive. In 2016, the two most expensive lobster dishes in the world were served at restaurants in Switzerland and Singapore, costing $295 and $260 per serving, respectively.
The modern lobster dinner began to take form around the middle of the 18th century. The Mayflower Society, a group of Bostonians who celebrated the English Mayflower Pilgrims' first landing in New England in 1620, held an annual feast that featured roast beef and boiled lobster. Around this time, lobsters were considered "poverty food" because they were so abundant and inexpensive that only the poor could afford them. In his 1851 cookbook The Physiology of Taste, French gastronome Jean Anthelme Brillat-Savarin described lobster as "a fish for great ladies and kings."
Several factors led to lobster's rise as a luxurious dish. One was the increasing popularity of seafood in general. Another was improvements in transportation and refrigeration technology that made it possible to ship live lobsters long distances without spoiling them. And finally, advances in cooking methods such as steaming made it possible to prepare a delicious lobster dinner without having to know how to boil a live one.
Today, lobster is considered by many to be a gourmet dish fit for special occasions. But there's no need to go to a fancy restaurant to enjoy it – fresh live lobsters can be found at many seafood markets and cooked easily at home.

The Secret to Cooking a Perfect Lobster
There is no one perfect way to cook a lobster, but there are definitely some tips and tricks that will help you make sure your lobster is cooked perfectly every time.
